Gruyere~ A delicions and classic raw milk cow cheese from the town of Gruyere (Where no cars are allowed...cleaning air makes for better pastures, hence better cheese!) With a smooth creamy pate (and NO holes), this cheese is one of Switzerland's most well known exports. Great for all kinds of dishes, but most notable the delicions FONDUE, with of course is FUN TO DO!!
Emmentaler~ The orifinal "Swiss" cheese. This is a very mild Swiss that is classically used in fondue and also as a sandwaich cheese. It is wonderful for melting. It has a sweet, nutty flavor perfect for Croque Monsieur.
Siciliano Pecorino~ From Sicily, this young Pecorino ("sheep") cheese is semi-firm and just a touch more salty tang than it's northern cousin, Toscano Pecorino. The shape is a small barrel, somewhere between the size of a baseball to softball and is aged for approximately 2 months.

Corbieres "Le Viala" 2004, Chateau de Mattes-Sabran ~ From the steep, rocky hillsides of southern France comes this saturated blend of Syrah, Grenache and Mourvedre. Mattes-Sabran is a top-notch producer committed to quality, which is clearly evident from the very first whiff of dense, blackberry fruit laced with wild herbs and spiky pepper perfume. On the palate, a wave of concentrated black fruit flavors bounded by dusty tannins elicits a rush of pure pleasure that lingers pleasantly until the next sip. There is no oak influence in this juice, just pure delicious expression of place - and the price is right! Enjoy it on a frosty autumn evening alongside a savory roast and a roaring fire.
Jumilla 2005, Bodegas Jaun Gil ~ Established in 1916, Bodegas Juan Gil is today owned by the great-grandchildren of founder Juan Gil Lencina. Situated in dusty southeast Spain, Jumilla's continental climate is one where limited rainfall and extreme temperature swings are the norm. Happily, for wine lovers, the Monastrell grape (aka Mourvedre) is ideally suited for this demanding environment. The hot days followed by chilly nights produce small, super-concentrated grapes with bold wild-berry flavors bounded by thick, velvety tannins. Jumilla is a region on the rise and this full-throttle elixir revels in hedonistic pleasure. Drink it alongside boldly flavored grilled meats and enjoy the ride.
